Eggs Bulls Eye Curry

I am not sure what should be the right name of this dish. During my stay in Stamford met some nice friends like Divya. She was not into cooking but very fond of good food. Before we started sharing flat she used to cook only  Dosa with ready made batter or maggi or better to survive on outside food. Cooking is something occasional for her. But one good part is, whenever she cooks it turns out always tasty. Her  sambar is very different than regular Hyderabadi sambar . Sorry I forgot to tell you she belongs to Hyderabad. One day she taught me this very unique dish for dinner and  hence I got this opportunity to share with you.


Ingredients :

1. Four medium sized onion, finely chopped
2. one tomato finely chopped
3. 1  table spoon cumin powder, 1 table spoon garlic finely chopped (optional)
4. chopped coriander leaves and green chilly
5.4-5 table spoon oil to fry

Method:

1.Heat the oil into  a frying pan ,add garlic, fry it for two minutes and then add chopped onion to it. Fry till it comes pink.
2. Break the eggs and place those gently on the layer/bed of onion. Break the eggs the way we do it for bulls eye or pouch.
3. Now sprinkle salt, chopped tomatoes ,green chilies and coriander.
4.Cover the pan with lead and cook it in medium flame for 15-20 minutes till eggs are not cooked and yolk turns into solid. You can gently turn it around if you want crispy fried .
Serve this in breakfast with roti/fulka. In lunch you can have this with rice and lentil. Or serve this with colorful salad as a side dish.

Chef's Tips :
You can place those small omelets  inside two bread slices with butter and grill it for 2 minutes . Grilled sandwich is ready . For sandwich you can add lettuce leaves. I can vouch your kids will relish this. Simple and healthy recipe for your family members whom you  care a lot!
