Starter for a small party - Kanda Pakoda & Soya Chicken

You can prepare this as a starter whenever you host a small party for your close friends; e.g. on the eve of holi. Hot soya chicken with chilled drinks is an yummy combination. Recently we had one of our most colorful festivals - Holi. We were all getting bored with our packed, boring job schedule in Mumbai - it was then that one of our friends suggested that we should have a Babe's party over some weekend ..and we jumped onto the idea. So we had a blast after an age, reminiscening about our school days, college days and all the adventureous, hillarious incidents in each one's life so far. Miss J,our host, prepared couple of delicious dishes and she is also a fabulous bar-tender,her hands can creat real magic on our souls. And Miss. P prepared pakoda at J's place.It was a saturday so we ended up eating only vegetarian delicacies but did not compromise on the taste. We rejuvinated our mind with a movie, 'Kanda Pakoda' with chilled soft drinks and finally the main-course, followed by the dessert, not to forget the spicy gossip. Isn't it a really good idea to have such party when you want to enjoy every moment of being present there ? Miss P prepared 'Kanda Pakoda' with very simple ingredients as detailed below - even my bachelor friends can prepare this one.
Ingredients for Kanda Pakoda : 1. Two big sized onions cut into long thin slices.
2. Green chilly, salt, pinch of turmeric as per your taste.
3. Finely chopped corriander leaves.
4. Chat masala and soda (optional).
5. Besan 4-5 table spoon.

Method:
1. Mix everything together. When you are mixing all the above ingredients along with 1-2 table-spoon of water, quantity of besan should be such that it is just sufficient to bind the onion. Do not put too much besan. Kanda pakoda tastes good when onions are lightly coated with besan and if we can maintain the crispyness.
2. Heat the oil into an oak and check the oil with a tip of besan.If it starts releasing oil and becomes brown, the oil is ready.
3. Add a small amount of mix multiple times and fry it .
Pakodas come well if their size is smaller. If you want to make a non-veg starter, soya chicken is lip-smacking. Let's tell you the simple ingredients.



Ingredients for Soya Chicken :

1. One medium sized onion, cut into thin round slice
2. Boneless/with bone small sized 7-8 chicken (chily chicken piece)
3. One table spoon soya sauce,One and half table spoon tomato sauce.
4. Refined oil/Olive oil ,salt and black pepper as per taste.

Method :
1.Boil the chicken with two cups of water in a pressure-cooker.Add some salt. Do not waste this water, we will use this chicken stoo at a later time and rest of it can be used for the soup.
2.Now heat two table spoon oil and add sliced onion.Wait till the onion turns pink.
3.Add chicken,black pepper and fry it for one minute.
4.Last, add tomato sauce and soya sauce, fry it for 4- 5 minutes,add pinch of sugar. Check and add salt,if required.

Chef's Tips :

1.You can sprinkle finely chopped spring onion before serving.
2.If you want to make it spicy, add slitted,de-seeded green chilly with sauce.
3.If you are fond of chicken sausage instead of chicken, cut chicken sausage into one inch pieces and fry it.
