Healthy-Simple potato sabji(Batti Chochhori)

I love this simple, healthy and easy-to-cook recipe with puri as breakfast. This recipe has been passed on by my mother. When ever I am crunched for time, but need to cook some mouth-watering sabjee with puri, I never forget this bati-chochhori. You need not be a typical bengali to love this recipe, since, this delicious, yet extremely health-conscious diet, suits the taste-buds across all regions of India as well as across all age groups.
Ingredients:
1.Two medium sized potatoes.
2.One medium sized finely chopped onion.
3.One table spoon mustard oil and finely chopped green chilly.
4.turmeric powder and salt to taste.
Method:
1. Take two and half cup of water in a kadai/frying pan.
2. Add chopped potato, onion, turmeric, salt, chilly into water.
3. Cover the frying pan with a lid and keep it for 10-15 minutes in medium flame.
4. Check if it's near complete and then put the oil into it for a tangy smell and keep it for another 2 mins.
5. Serve this with puri.

Chef''s Tips:
1. Cut the potatoes into cubical shapes.
2. If you want, you may add a pinch of asefoetedia (Hing) for good flavour.
3. Non-vegetarians can add some shrimp (kuncho chingri)to this to get that extra 'punch' .
