Fish Kebab (Machher Roasted Chop)


Sandeep Kumar Das was overwhelmed after trying this fabulous delicacy, which contains minimal oil, over the last week-end & was eager to try this one out on his own at home. So, this recipe is dedicated to our good old friend.

Sandeep, please share your experiences & feedback once you have tried making this delicacy at home on your own following the directions as below.

Ingredients:

1. Two big pieces of Rohu/Katla fish
2. One small spoon ginger paste
3. One small spoon garlic paste
4. One small spoon onion paste
5. Half small spoon garam masala powder
6. Mustard/Refined Oil - 2 ½ table spoon
7. Salt to taste and ½ small spoon chilly powder
8. Grind 5-6 biscuits to get biscuit powder
9. Besan (gram flour) 1 table spoon
Method:
Boil the fish in hot water for 4-5 minutes
Cool it and remove the bones from the fish
Mix it with ginger/garlic/onion paste and salt
Heat the frying pan and add 1 table spoon oil.
Add the fish mixture into hot oil and fry it for 4-5 minutes in medium flame.
Mixture should not stick to the pan. If required, you can sprinkle a little bit of water over it.
In the end, add the garam masala and switch off the flame.
Add besan with the fried mixture until it becomes sticky.
Stickiness should be to such an extent that you should be able to easily make balls out of the mixture.
Flatten the ball and roll into biscuit powder.
Keep this flattened fish tikka for 4-5 hours inside the refrigerator
You can roast those tikkas on a heated tava .But it may become difficult to manage this process and the tikkas can break. So better you heat the pan and add one table spoon oil and shallow fry those tikkas for 1-2 mins.
Serve it with salad.

Chef’s Tips:

You can use Surmai fish if you don’t eat river fish. But remove the skin after boiling the fish
Do not use too much of spices. The original taste of the fresh fish should come out from the tikkas. Other wise too much of spice will suppress the taste of fish.
If garam masala powder is not available at home then grind 1 clove/1 cinnamon/1 cardamom

  2. Yes, this is the best. Have not tried it till now to prepare at home...coz it is better to eat at your home...hehe
