steamed brinjal (begun bhape)

Begun bhape (steamed brinjal) is a less-oily, simple yet tangy-to-taste dish. I remember that during my childhood days, quite often, I used to demand this dish from my mother; it tastes yummy with basmati rice.
Ingredients:

1.One Brinjal . Cut into strips. Make four slices from one big brinjal
2.Mustard paste two table spoon
3.One small spoon ginger, garlic and jeera powder
4.One small spoon turmeric powder
5.Salt as per taste
6.Two table spoon oil (Mustard/refined)
7.Green chillies

Method:
1. Add mustard paste in two cup of water.
2. Boil the brinjal in mustard paste water
3. Add turmeric powder, salt, ginger, chillies, garlic, jeera powder into the brinjal.
4. Keep boiling until the gravy becomes thick and the brinjal looks completely cooked
5. Heat the oil and put the masala-coated brinjal inside the frying pan very gently.
6. Fry this for 1 and 1/2 minutes.

Chef's Tips:
1. Sometimes when we grind mustard seeds in mixie, it tastes bitter. To avoid this, you can use readily available mustard powder like Sunrise mustard powder (easily available in any kirana/grocery shop) and soak it in luke warm water for 5 minutes.

2. Brinjals with minimal seeds should be chosen for this dish.
